1. Prepare the Fruits and Vegetables
Chop the cucumber, pineapple, jicama, and mango into bite-sized pieces. Rinse the bean sprouts under cold water and set aside.
2. Combine Ingredients
In a large mixing bowl, combine the chopped cucumber, pineapple, jicama, mango, and bean sprouts. Add the strips of Roti Jala (or flatbread) to the bowl.
3. Make the Dressing
In a separate small bowl, mix together the peanut sauce, chili paste, lime juice, and salt. Adjust the seasoning to taste.
4. Toss the Salad
Pour the dressing over the mixed fruits and vegetables. Toss gently to coat everything evenly.
5. Garnish and Serve
