1. Prepare the Rice
Rinse the basmati rice under cold water until the water runs clear. In a pot, combine the rinsed rice, coconut milk, water, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-20 minutes until the rice is cooked and fluffy.
2. Marinate the Chicken
In a bowl, mix garlic, ginger, soy sauce, and lemongrass. Add the chicken thighs, ensuring they are well coated. Let it marinate for at least 30 minutes, preferably in the refrigerator.
3. Cook the Chicken
Heat a skillet over medium heat. Add the marinated chicken thighs and cook for about 6-7 minutes on each side until cooked through and golden brown. Remove from heat and let it rest.
4. Prepare the Garnishes
While the chicken is cooking, prepare the garnishes. Boil the eggs for 10 minutes, then peel and slice them. Slice the cucumber and set aside. Roast the peanuts if not already roasted.
5. Assemble the Nasi Lemak
On a serving plate, place a scoop of coconut rice, top with a piece of chicken, a boiled egg, sliced cucumber, and a handful of peanuts. Serve with sambal on the side.
