1. Make the Laksa Paste
In a food processor, combine all the Laksa Paste ingredients and blend until a smooth paste forms.
2. Cook the Laksa Soup
In a large pot, heat a little oil over medium heat. Add the Laksa Paste and cook for about 5 minutes until fragrant. Pour in the chicken broth and coconut milk, and bring to a simmer.
3. Add Chicken and Noodles
Stir in the shredded chicken and rice noodles, cooking until the noodles are tender, about 5-7 minutes.
4. Serve
Ladle the curry soup into bowls, topping with bean sprouts, halved eggs, and garnishing with fresh cilantro. Serve with lime wedges.
