1. Soak Rice Vermicelli
Soak the rice vermicelli in warm water for about 15 minutes until softened, then drain and set aside.
2. Prepare Vegetables
Prepare all the vegetables by chopping and julienning them as required.
Cooking
3. Stir-Fry Garlic
Heat a large wok over medium-high heat. Add a tablespoon of oil and stir-fry the minced garlic until fragrant.
4. Cook Chicken
Add the sliced chicken breast and stir-fry until cooked through, about 5 minutes.
5. Add Prawns
Add the prawns and cook until they turn pink, about 3 minutes. Push everything to the side of the wok.
6. Scramble Eggs
Add the eggs to the empty side of the wok and scramble until just set, then mix everything together.
7. Add Noodles
Add the soaked rice vermicelli and Hokkien noodles to the wok, tossing to combine.
8. Add Sauce
Pour in the soy sauce, oyster sauce, sesame oil, white pepper, and salt. Stir-fry everything together for another 5 minutes, until heated through.
9. Add Vegetables
Finally, add the chopped Chinese cabbage, carrot, bean sprouts, and spring onions. Stir-fry for another 2-3 minutes until the vegetables are just tender.
Serving

Serve hot, garnished with additional spring onions if desired.
