Preparation

  1. 1

    Prepare the Filling

In a large skillet, heat a little oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.

  2. 2

    Add Spices and Chicken

Stir in the curry powder and cook for another minute. Add the shredded chicken, coconut milk, frozen peas, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until the mixture is heated through and slightly thickened.

  3. 3

    Cool the Filling

Remove from heat and allow the filling to cool completely before using.

  4. 4

    Prepare the Puff Pastry

Preheat your oven to 400°F (200°C). Roll out the puff pastry on a lightly floured surface and cut into squares or circles.

  5. 5

    Assemble the Puffs

Place a spoonful of the cooled chicken filling in the center of each pastry square. Fold the pastry over to create a triangle and seal the edges by pressing with a fork.

  6. 6

    Bake the Puffs

Arrange the puffs on a baking sheet lined with parchment paper. Brush the tops with an egg wash (1 egg beaten with 1 tbsp water) for a golden finish. Bake for 20-25 minutes or until golden brown.
