Prepare the Filling
In a large skillet, heat a little oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté until the onion is translucent.

Add Spices and Chicken
Stir in the curry powder and cook for another minute. Add the shredded chicken, coconut milk, frozen peas, salt, and black pepper. Cook for 5-7 minutes, stirring occasionally, until the mixture is heated through and slightly thickened.

Cool the Filling
Remove from heat and allow the filling to cool completely before using.

Prepare the Puff Pastry
Preheat your oven to 400°F (200°C). Roll out the puff pastry on a lightly floured surface and cut into squares or circles.

Place a spoonful of the cooled chicken filling in the center of each pastry square. Fold the pastry over to create a triangle and seal the edges by pressing with a fork.
