Prepare the Noodles
Soak the flat rice noodles in warm water for about 30 minutes or until softened. Drain and set aside.

Stir-fry
Heat a large wok or frying pan over high heat. Add a little oil and stir-fry the Chinese sausage until fragrant. Add the shrimp and cook until they turn pink.

Add Noodles
Add the soaked noodles to the wok, and drizzle with soy sauce, dark soy sauce, and chili paste. Stir-fry everything together for about 2-3 minutes.

Add Vegetables and Egg
Push the noodles to one side of the wok, crack the eggs into the empty space, and scramble them. Once cooked, mix them into the noodles along with the bean sprouts and chives.

Season with salt and white pepper to taste. Stir-fry for another minute until everything is well combined and heated through.
