    Prepare the Potatoes

    Wash and peel the Russet potatoes. Cut them into thin strips to form fries.

    Soak the Potatoes

    Soak the cut fries in cold water for at least 30 minutes to remove excess starch. Drain and pat them dry with a clean towel.

    Heat the Oil

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the dried potato strips to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes per batch. Remove and drain on paper towels.

    Season the Fries

    Drizzle the hot fries with truffle oil, sprinkle with Parmesan cheese, salt, and black pepper. Toss to combine evenly.

Mustard Aioli

    Combine Ingredients

    In a bowl, mix together the mayonnaise, grainy mustard, minced garlic clove, and lemon juice.

    Season the Aioli

    Add salt and black pepper to taste. Stir well to combine all ingredients.

    Chill

    Cover the aioli and refrigerate for at least 15 minutes to allow flavors to meld.
