Preparing the Base

Rinse 1 cup of sushi rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit, covered, for another 10 minutes.

While the rice is cooking, cut 1 pound of sashimi grade ahi tuna into small cubes. In a bowl, combine 3 tablespoons of soy sauce, 1 tablespoon of sesame oil, 2 tablespoons of sliced green onions, 1 tablespoon of sesame seeds, 1 teaspoon of sriracha, and 1 tablespoon of lime juice. Add the cubed tuna to the marinade and let it sit in the refrigerator for at least 15 minutes.

Once the rice is prepared and has cooled slightly, spoon a portion of the sushi rice into a bowl. Top it with the marinated ahi tuna, followed by sliced avocado, cucumber, shredded carrot, sliced radishes, and a scoop of seaweed salad. Drizzle any remaining marinade over the top if desired.
