Preparing the Base
Cook the Sushi Rice
Rinse 1 cup of sushi rice under cold water until the water runs clear. In a pot, combine the rinsed rice and 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit, covered, for another 10 minutes.

While the rice is cooking, cut 1 pound of sashimi grade ahi tuna into small cubes. In a bowl, combine 3 tablespoons of soy sauce, 1 tablespoon of sesame oil, 2 tablespoons of sliced green onions, 1 tablespoon of sesame seeds, 1 teaspoon of sriracha, and 1 tablespoon of lime juice. Add the cubed tuna to the marinade and let it sit in the refrigerator for at least 15 minutes.
