Preparation of Ingredients
1. Prepare the Lobster
Bring a large pot of salted water to a boil. Add the whole Atlantic lobster and cook for about 8-10 minutes until it turns bright red. Remove from water and let cool. Once cooled, extract the meat from the claws and tail, and chop into bite-sized pieces.
2. Prepare the Prawns
Peel and devein the prawns. Set aside.
3. Chop the Aromatics
Finely chop the shallots and roughly chop the cherry tomatoes and Italian parsley.
Cooking the Pasta and Sauce
4. Cook the Spaghetti
In the same pot, bring the water back to a boil and cook the spaghetti according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti and set aside.
5. Make the Sauce
In a large skillet, melt the butter over medium heat. Add the chopped shallots and sauté until translucent, about 2-3 minutes. Pour in the white wine and let it simmer for about 5 minutes until reduced by half.
6. Add Tomatoes and Prawns
Add the chopped cherry tomatoes and prawns to the skillet. Cook for 3-4 minutes until the prawns turn pink and the tomatoes have softened.
7. Combine Everything
Add the cooked spaghetti and lobster meat to the skillet. Toss everything together, adding reserved pasta water as needed to create a light sauce. Season with salt and black pepper to taste.
8. Finish with Lemon and Parsley
Stir in the lemon juice and chopped Italian parsley just before serving.
