Method

Tataki-Style Steak

    Prepare the Steak

    Season the beef tenderloin with salt and black pepper. Heat a skillet over high heat and sear the steak for about 1-2 minutes on each side until browned but rare in the center.

    Make Marinade

    In a bowl, mix soy sauce, rice vinegar, mirin, and sesame oil. Allow the steak to marinate in this mixture for at least 15 minutes.

    Slice and Serve

    Remove the steak from the marinade, and slice it thinly against the grain. Garnish with black sesame seeds and chopped green onions.

Ponzu Sauce

    Combine Ingredients

    In a bowl, whisk together soy sauce, yuzu juice, rice vinegar, mirin, and dashi stock until well combined.

    Serve

    Transfer the ponzu sauce to a serving bowl and set aside for drizzling over the tataki-style steak.

Seared Salmon Sushi

    Prepare Sushi Rice

    Rinse sushi rice under cold water until the water runs clear. Combine with water in a pot and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit for an additional 10 minutes.

    Season Rice

    In a small bowl, mix rice vinegar, sugar, and salt. Gently fold this mixture into the cooked rice until fully incorporated. Allow to cool slightly.

    Seared Salmon

    Using a skillet, sear the salmon fillet for about 1-2 minutes on each side until cooked through. Let cool and slice thinly.

    Roll Sushi

    On a bamboo mat, place a nori sheet, spread a thin layer of sushi rice, add sliced salmon, and roll tightly. Slice into bite-sized pieces.

    Serve with wasabi and soy sauce for dipping.

Tuna & Avocado Crunch Roll

    Prepare Sushi Rice

    Rinse sushi rice under cold water until the water runs clear. Combine with water in a pot and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 20 minutes. Remove from heat and let it sit for an additional 10 minutes.

    Prepare Tuna and Avocado

    Slice the tuna fillet and avocado into thin strips.
