Crust Preparation
- 1
Make the Graham Cracker Crust
In a mixing bowl, combine the graham cracker crumbs, melted butter, brown sugar, and salt. Mix until well combined and the mixture resembles wet sand.
- 2
Form the Crust
Press the graham cracker mixture into the bottom and up the sides of a 9-inch pie dish to form an even crust. Bake at 350°F (175°C) for 10 minutes, then remove and let cool.
Filling Assembly
- 3
Layer the Ice Cream
Scoop the vanilla ice cream into the cooled crust and spread it evenly. Place it in the freezer for 30 minutes to firm up.
- 4
Add Chocolate Ice Cream
After the vanilla layer has firmed, scoop the chocolate ice cream on top and spread it evenly. Return to the freezer for another 30 minutes.
Topping Preparation
- 5
Toast the Marshmallows
Preheat a kitchen torch. Once the ice cream pie is set, sprinkle the mini marshmallows on top and use the torch to toast them until golden brown.
- 6
Prepare Whipped Cream
In a mixing bowl, beat the heavy whipping cream using an electric mixer until stiff peaks form. Set aside.
- 7
Drizzle Sauces
Drizzle the salted caramel sauce and chocolate sauce over the toasted marshmallows.
- 8
Garnish with Rosemary
Add fresh rosemary leaves on top for garnish, adjusting the amount to taste.
Serving

Serve the Pie
Slice the pie into wedges and serve with a dollop of whipped cream on the side. Enjoy your S'mores Ice Cream Pie!
