    Preheat the Oven

    Preheat your oven to 200°C (400°F).

    Prepare the Mushrooms

    Clean the button mushrooms by wiping them with a damp cloth. If they are large, you can halve them; otherwise, leave them whole.

    Chop the Shallots and Garlic

    Peel the shallots and slice them thinly. Peel the garlic cloves and mince them finely.

Mixing the Marinade

    Combine Ingredients

    In a bowl, mix the miso paste, olive oil, minced garlic, white wine, salt, and black pepper until you have a smooth marinade.

Roasting the Mushrooms

    Toss the Mushrooms

    In a large mixing bowl, add the cleaned mushrooms and sliced shallots. Pour the marinade over them and toss until all the mushrooms and shallots are well coated.

    Arrange on a Baking Sheet

    Spread the coated mushrooms and shallots evenly on a baking sheet lined with parchment paper.

    Roast in the Oven

    Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the mushrooms are golden brown and tender. Stir halfway through to ensure even cooking.

Serving

    Garnish and Serve

    Remove the mushrooms from the oven, and sprinkle with fresh parsley before serving. Enjoy your miso roasted mushrooms warm as a side dish or on top of salads.
