Preparing the Patties

    Form the Patties

    In a bowl, mix the ground beef with salt and black pepper. Divide the mixture into two equal portions and shape them into patties, about 3/4 inch thick.

    Cook the Patties

    Preheat a grill or skillet over medium-high heat. Cook the patties for about 4-5 minutes on each side, or until they reach your desired doneness. In the last minute of cooking, place a slice of cheddar cheese on each patty to melt.

Making the Roasted Onion Aioli

    Prepare the Aioli

    In a food processor, combine the roasted onion, garlic cloves, mayonnaise, lemon juice, salt, and black pepper. Blend until smooth and creamy. Adjust seasoning to taste.

Assembling the Burger

    Assemble the Burger

    Toast the burger buns lightly on the grill or in a toaster. Spread a generous amount of roasted onion aioli on the bottom bun. Place a lettuce leaf, followed by one cheeseburger patty, then a pickle slice. Add the second cheeseburger patty on top, and finish with another pickle slice and a dollop of aioli. Cap with the top bun.
