Mix the Filling
In a large mixing bowl, combine ground pork, chopped green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
Assemble Gyoza

Fill the Wrappers
Take a wonton wrapper and place about 1 tablespoon of the pork filling in the center. Moisten the edges of the wrapper with water using your finger. Fold the wrapper in half over the filling to create a half-moon shape and pinch the edges to seal. For a decorative look, you can pleat the edges.

Continue filling and sealing the remaining wonton wrappers until all the filling is used.
Cook Gyoza

Pan-fry the Gyoza
Heat a non-stick skillet over medium-high heat and add 1 tablespoon of oil. Once hot, add the gyoza in a single layer. Fry for about 2-3 minutes until the bottoms are golden brown.

Steam the Gyoza
Carefully pour in about 1/4 cup of water into the skillet and cover with a lid immediately. Allow the gyoza to steam for about 5-7 minutes or until the water has evaporated and the gyoza are cooked through.

Crisp the Gyoza
Remove the lid and let any remaining water evaporate. Cook for an additional 1-2 minutes to crisp up the bottoms again before removing from heat.

Mix the Sauce
In a small bowl, combine soy sauce, rice vinegar, and hot mustard. Stir until well mixed.
