Pastry Preparation

    Make the Pastry

    In a large bowl, combine all-purpose flour and salt. Cut in the cold unsalted butter until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, mixing until a dough forms. Shape the dough into a ball, wrap in plastic wrap, and refrigerate for at least 1 hour.

Apple Filling Preparation

    Prepare the Apples

    Peel, core, and slice the Granny Smith apples. In a large bowl, toss the apple slices with granulated sugar, ground cinnamon, and lemon juice. Let the mixture sit for 10 minutes to allow the flavors to meld.

    Cook the Filling

    In a skillet, melt 2 tablespoons of butter over medium heat. Add the apple mixture and cook for about 5-7 minutes until the apples are slightly tender but still hold their shape. Remove from heat and let cool.

Assembly and Baking

    Assemble the Pies

    Preheat your oven to 375°F (190°C). Roll out the chilled pastry dough on a floured surface to about 1/8-inch thickness. Cut into circles about 6 inches in diameter. Place a generous spoonful of the apple filling in the center of each circle. Fold the pastry over the filling to create a half-moon shape and crimp the edges to seal.

    Bake the Pies

    Place the assembled pies on a baking sheet lined with parchment paper. Cut a small slit in the top of each pie to allow steam to escape. Bake in the preheated oven for 25-30 minutes until golden brown.

    Remove the baked apple pies from the oven and let them cool for a few minutes. Serve warm, topped with sliced toasted almonds and a scoop of Canadian maple ice cream.
