Crème Brûlée Cheesecake Recipe

Cheesecake Base

Method

Crust

    Prepare the Crust

    In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined and the mixture resembles wet sand.

    Press into the Pan

    Press the mixture firmly into the bottom of a 9-inch springform pan. Bake at 350°F (175°C) for 8-10 minutes until lightly golden. Remove from the oven and let cool.

Cheesecake Filling

    Mix Cream Cheese

    In a large mixing bowl, beat the cream cheese until smooth and creamy using a hand mixer or stand mixer.

    Add Sugar and Sour Cream

    Gradually add granulated sugar and mix until combined. Then, add sour cream and vanilla extract, mixing until smooth.

    Incorporate Eggs

    Add eggs one at a time, mixing well after each addition until just combined. Avoid over-mixing.

    Add Heavy Cream and Cornstarch

    Slowly mix in heavy cream and cornstarch until fully incorporated.

    Pour into Crust

    Pour the cheesecake filling over the cooled crust in the springform pan, smoothing the top with a spatula.

    Bake

    Bake in a preheated oven at 325°F (160°C) for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool in the oven for 1 hour.

    Chill

    Remove from the oven and refrigerate for at least 4 hours, preferably overnight.

Strawberry Compote

    Cook Strawberries

    In a small saucepan over medium heat, combine sliced strawberries, granulated sugar, and lemon juice. Cook, stirring occasionally, until the strawberries release their juices and the mixture thickens slightly, about 10-15 minutes.

    Cool

    Remove from heat and let the compote cool to room temperature.

Whipped Cream

    Whip the Cream

    In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Using a hand mixer or stand mixer, whip until soft peaks form.

    Serve

    Once the cheesecake has set, top with strawberry compote and a dollop of whipped cream before serving.
