Method

Preparing the Fries

  1. 1

    Cutting the Potatoes

Wash and dry the russet potatoes. Cut each potato into strips about 1/4 inch thick to form fries. You can also cut them into wedges if preferred.

  2. 2

    Soaking the Potatoes

Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and will make the fries crispier.

  3. 3

    Drying the Fries

After soaking, drain the fries and pat them dry with paper towels to remove excess moisture.

  4. 4

    Frying the Fries

In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Carefully add the fries in batches, frying until golden brown and crispy, about 5-7 minutes per batch.

  5. 5

    Seasoning the Fries

Once the fries are cooked, remove them from the oil and drain on paper towels. While they are still hot, sprinkle with salt to taste.

Making the Blue Cheese Sauce

  1. 6

    Combining Ingredients

In a medium bowl, combine the blue cheese, cream cheese, sour cream, milk, garlic powder, and black pepper.

  2. 7

    Mixing the Sauce

Using a hand mixer or a whisk, blend the ingredients until smooth and creamy. Adjust the consistency by adding more milk if necessary.

  3. 8

    Adding Chives

Fold in the chopped chives into the blue cheese sauce for added flavor and garnish.

Assembling the Dish

  1. 9

    Layering the Fries

Place a generous portion of the fried potatoes on a serving plate.

  2. 10

    Drizzling the Sauce

Pour the blue cheese sauce over the hot fries, allowing it to melt slightly.

  3. 11

    Adding Toppings

Sprinkle the bacon bits and additional chopped chives on top for garnish.
