Method

For the Blackened Chicken

    Prepare the Chicken

    Preheat the grill or a cast iron skillet over medium-high heat.

    Season the Chicken

    Rub each chicken breast with olive oil and then generously coat with blackening seasoning on both sides.

    Cook the Chicken

    Place the seasoned chicken on the grill or skillet and cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from heat and let rest.

For the Warm Potato Salad

    Boil the Potatoes

    In a large pot, bring salted water to a boil. Add the red potatoes and cook until fork-tender, about 15-20 minutes. Drain and let cool slightly.

    Cook the Bacon

    In a skillet, cook the bacon over medium heat until crispy. Remove from the skillet and chop into pieces.

    Mix the Salad

    In a large bowl, combine the warm potatoes, bacon, chopped green onions, mayonnaise, white vinegar, salt, and black pepper. Toss gently to combine.

For the Horseradish Aioli

    Combine Ingredients

    In a bowl, mix together mayonnaise, prepared horseradish, lemon juice, minced garlic, salt, and black pepper until smooth.

    Chill

    Cover and refrigerate for at least 30 minutes to allow flavors to meld.

For the Creamy Coleslaw

    Combine Vegetables

    In a large bowl, combine shredded green cabbage and grated carrots.

    Make the Dressing

    In a separate bowl, whisk together mayonnaise, apple cider vinegar, sugar, salt, and black pepper until well combined.

    Pour the dressing over the cabbage and carrots, and toss to coat evenly. Refrigerate for at least 30 minutes before serving.
