Roast the Cauliflower
Preheat the oven to 425°F (220°C). Cut the cauliflower into small florets. In a large bowl, combine the cauliflower florets with olive oil, ground cumin, smoked paprika, salt, and black pepper. Toss until the cauliflower is evenly coated.

Spread the seasoned cauliflower on a baking sheet in a single layer. Bake for 25-30 minutes, or until the cauliflower is golden and tender, stirring halfway through.
Chipotle Mayo

Make the Chipotle Mayo
In a small bowl, whisk together the mayonnaise, chipotle peppers, and lime juice until smooth. Adjust seasoning to taste.
Cilantro Chimichurri

Prepare the Chimichurri
In a food processor, combine the cilantro leaves, garlic, red wine vinegar, olive oil, and salt. Pulse until it reaches a fine consistency. Set aside.
Corn Guacamole

In a medium bowl, mash the ripe avocados using a fork or a potato masher. Stir in the corn kernels, lime juice, salt, and diced red onion. Mix until well combined.
