Method

Preparing the Fries

  1. 1

    Cutting the Potatoes

Wash and peel the russet potatoes. Cut them into thin strips, about 1/4 inch thick.

  2. 2

    Soaking the Potatoes

Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the fries crispier.

  3. 3

    Drying the Potatoes

After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture.

Frying the Fries

  1. 4

    Heating the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

  2. 5

    Frying the Potatoes

Carefully add a handful of dried potato strips to the hot oil. Fry in batches to avoid overcrowding. Fry for about 4-5 minutes or until golden brown and crispy.

  3. 6

    Draining the Fries

Use a slotted spoon to remove the fries from the oil and place them on a plate lined with paper towels to drain excess oil. Immediately sprinkle with salt.

Finishing Touches

  1. 7

    Adding Toppings

Once all fries are fried, place them in a large mixing bowl. Drizzle with truffle oil and toss to coat evenly.

  2. 8

    Adding Parmesan and Herbs

Grate the parmesan cheese and add it to the fries along with chopped fresh parsley and black pepper. Toss gently to combine.
