Method

Preparing the Filet Mignon

  1. 1

    Season the Steak

Pat the filet mignon dry with paper towels. Sprinkle salt and black pepper evenly on both sides of the steaks.

  2. 2

    Heat the Pan

In a large skillet, heat olive oil over medium-high heat until shimmering.

  3. 3

    Cook the Filet Mignon

Add the seasoned filet mignon to the hot skillet. Cook for 4-5 minutes on each side for medium-rare, adjusting the time based on your desired doneness.

  4. 4

    Rest the Steak

Remove the filet mignon from the skillet and let it rest on a cutting board for 5 minutes before slicing.

Preparing the Seasonal Vegetables

  1. 5

    Trim the Asparagus

Wash the asparagus and trim the tough ends. Cut into 2-inch pieces.

  2. 6

Prepare the Carrots and Bell Pepper

Peel the carrots and slice them into thin rounds. Cut the bell pepper into strips. Mince the garlic.

  3. 7

    Sauté the Vegetables

In the same skillet used for the steak, add butter and then add garlic. Sauté for 1 minute until fragrant. Add asparagus, carrots, and bell pepper. Cook for 5-7 minutes until tender but still crisp, stirring occasionally.
