Preparing the Calamari

Clean the Calamari
If using whole calamari, clean and cut them into rings. Rinse under cold water and pat dry with paper towels.

Prepare the Breading
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and paprika. Mix well.

Heat the Oil
In a deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C).

Bread the Calamari
Dip each calamari ring first into the egg mixture, then dredge in the flour mixture until fully coated.

Fry the Calamari
Carefully add the breaded calamari rings to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown. Remove and drain on paper towels.
Making the Zesty Aioli

Combine Ingredients
In a mixing bowl, add the mayonnaise, minced garlic cloves, lemon juice, Dijon mustard, salt, and black pepper.

Mix Well
Stir the mixture until all ingredients are well combined. Add chopped fresh parsley for garnish.

Serve
Transfer the aioli to a serving bowl and serve alongside the fried calamari.
