Cook the Udon Noodles
Bring a large pot of salted water to a boil. Add the udon noodles and cook according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside, reserving a bit of the pasta water.

Prepare the Bacon
In a large skillet over medium heat, add the bacon. Cook until crispy, about 5-7 minutes. Remove the bacon from the skillet and drain on paper towels, leaving about 1 tablespoon of bacon fat in the skillet.

Make the Dashi Truffle Cream Sauce
In the same skillet, add the dashi stock and bring to a simmer. Stir in the heavy cream and let it cook for 2-3 minutes. Add the truffle oil, salt, and black pepper to taste. Stir well to combine.

Combine Egg Yolks and Cheese
In a bowl, whisk together the egg yolks and grated Parmesan cheese until smooth.

Mix Everything Together
Reduce the heat to low. Add the cooked udon noodles to the skillet with the sauce. Quickly pour in the egg yolk and cheese mixture, stirring constantly to create a creamy sauce. If the sauce is too thick, add reserved pasta water a little at a time until desired consistency is reached.

Add the crispy bacon to the udon mixture and stir to combine. Adjust seasoning with additional salt and pepper if needed. Serve immediately, garnished with chopped chives.
