Melt Chocolate and Butter
In a double boiler or a heatproof bowl over simmering water, combine the unsweetened chocolate and unsalted butter. Stir until melted and smooth. Remove from heat and let cool slightly.
- 3
Mix Sugar and Eggs
In a large mixing bowl, whisk together the granulated sugar, large eggs, and large egg yolks until well combined and slightly frothy.
- 4
- 5
Add Dry Ingredients
Gently fold in the all-purpose flour, vanilla extract, and a pinch of salt until just combined. Be careful not to overmix.
- 6
Pour into Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- 7
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are set but the center remains soft.
- 8
Cool and Serve
Remove the cakes from the oven and let them cool for 1-2 minutes. Carefully invert onto dessert plates and serve immediately with fresh raspberries and scoops of tahitian vanilla ice cream.
