Miso Roasted Mushrooms

    Prep the Ingredients

    Preheat your oven to 200°C (400°F). Clean the button mushrooms by wiping them with a damp cloth. Trim the ends of the stems if needed. Peel and thinly slice the shallots. Mince the garlic cloves.

    Make the Miso Marinade

    In a large bowl, whisk together the miso paste, olive oil, and white wine until smooth. Add the minced garlic and a pinch of black pepper to the mixture.

    Combine the Mushrooms and Shallots

    Add the cleaned button mushrooms and sliced shallots to the bowl with the miso marinade. Toss everything together until the mushrooms and shallots are well coated with the marinade.

    Roast the Mushrooms

    Spread the marinated mushrooms and shallots evenly on a baking sheet lined with parchment paper. Roast in the preheated oven for about 25-30 minutes, or until the mushrooms are tender and slightly caramelized, stirring halfway through for even cooking.

    Garnish and Serve

    Once done, remove the mushrooms from the oven and transfer them to a serving dish. Sprinkle with chopped fresh parsley for garnish. Serve warm as a side dish or topping.
