Preparation

    Prepare the Steak

    Season the New York strip steak with salt and black pepper on both sides. Heat a skillet over medium-high heat and add 1 tablespoon of unsalted butter.

    Cook the Steak

    Once the butter is melted and bubbling, add the steak to the skillet. Cook for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved. Remove the steak from the skillet and let it rest for 5 minutes before slicing it thinly.

    Make the Garlic Butter

    In the same skillet, reduce the heat to low and add the remaining unsalted butter. Mince the garlic and add it to the melted butter. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

    Prepare the Au Jus

    Add the red wine to the skillet and scrape up any brown bits from the bottom. Let it simmer for 3-4 minutes, then add the beef broth and fresh thyme. Simmer for an additional 10 minutes.

    Assemble the Dips

    Slice the hoagie rolls in half and place them on a baking sheet. Layer the sliced steak on the bottom half of each roll and top with gruyere cheese. Place under the broiler for 2-3 minutes until the cheese is melted and bubbly.

    Serve

    Remove the sandwiches from the oven, drizzle the garlic butter over the steak and cheese, and serve with the red wine au jus for dipping.
