Fajitas
Method
Preparation
- 1
Prepare the Chicken or Prawns
If using chicken, season the chicken breast with salt, black pepper, and your choice of spices. If using prawns, season them similarly. Heat a skillet over medium-high heat and add olive oil. Once hot, add the chicken or prawns and cook until blackened and fully cooked (about 7-10 minutes for chicken, 3-5 minutes for prawns). Remove from heat and let rest.

- 3
Warm the Tortillas
Wrap the corn tortillas in aluminum foil and place them in a preheated oven at 350°F (175°C) for about 10 minutes until warmed through. Alternatively, you can warm them directly on the stovetop for about 30 seconds on each side until soft and pliable.
- 4
Assemble the Fajitas
Slice the cooked chicken or prawns into strips. On each tortilla, layer some sautéed peppers and onions, a portion of the blackened chicken or prawns, a dollop of roasted corn guacamole, and drizzle with peanut salsa macha. Squeeze fresh lime juice on top for added flavor.
- 5
Serve
Serve the assembled fajitas immediately with extra lime wedges and your choice of sides.
