Make the Pastry
In a large bowl, whisk together the flour, sugar, and salt. Add the chilled butter cubes and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

Gradually add ice water, one tablespoon at a time, mixing until the dough begins to come together. Do not overmix.

Divide the dough into two equal portions, shape each into a disk, wrap in plastic wrap, and refrigerate for at least 1 hour.

Prepare the Filling
In a large mixing bowl, combine the sliced Granny Smith apples, brown sugar, cinnamon, nutmeg, and lemon juice. Toss well to coat the apples evenly.

Assemble the Pies
Preheat your oven to 425°F (220°C). Roll out one disk of dough on a lightly floured surface to fit your individual pie dishes.

Place the rolled dough into the pie dishes, filling them with the apple mixture and topping with chopped toasted almonds.

Roll out the second disk of dough and cut it into strips to create a lattice top, or simply cover the pies with a solid layer of dough. Trim and crimp the edges.

Cut small slits in the top crust to allow steam to escape. Place the pies on a baking sheet and bake for 25-30 minutes or until the crust is golden brown and the apples are tender.

Let the pies cool slightly before serving. Serve each pie warm with a scoop of Tahitian vanilla ice cream on top.
