    Prepare Gaufrette Chips

    Preheat your oven to 375°F (190°C). Slice potatoes thinly using a mandoline to create gaufrette shapes. Rinse the slices in cold water to remove excess starch and pat them dry with a paper towel. In a bowl, toss the potato slices with a little olive oil and season with salt. Arrange them in a single layer on a baking sheet lined with parchment paper and bake for about 15-20 minutes, or until they are golden brown and crisp. Allow them to cool.

    Prepare Shallots and Chives

    Finely chop the shallots and chives. Set aside in separate bowls.

    Assemble the Dish

    On a serving platter, arrange the warm gaufrette chips. Spoon the sour cream into a small bowl and place it in the center of the platter. Carefully place the royal osetra caviar next to the sour cream. Sprinkle the chopped shallots and chives around the platter for garnish.

    Serve immediately while the gaufrette chips are warm. Advise guests to spread a little sour cream on a chip, top it with a spoonful of caviar, and finish with a sprinkle of shallots and chives.
