Prepare the Artichokes
Trim the artichokes by removing the tough outer leaves and cutting off the top third of the artichoke. Cut the artichokes in half lengthwise and remove the fuzzy choke in the center.

Make the Batter
In a large mixing bowl, combine the flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold water until the batter is smooth and well combined.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Fry the Artichokes
Dip each artichoke half into the batter, allowing excess to drip off. Carefully place them in the hot oil and fry for about 4-5 minutes or until golden brown and crispy. Fry in batches if necessary.

Drain and Serve
Remove the fried artichokes from the oil and place them on a paper towel-lined plate to drain excess oil. Serve hot with marinara sauce on the side for dipping.
