Prepare the Eggplant
Slice the eggplants into 1/4 inch thick rounds. Sprinkle with salt and let them sit for about 30 minutes to draw out excess moisture. Rinse and pat dry.

Cook the Eggplant
Preheat the oven to 400°F (200°C). Brush both sides of the eggplant slices with olive oil and arrange them in a single layer on baking sheets. Roast in the oven for about 25-30 minutes until tender and slightly browned, flipping halfway through.

Layer the Napoleon
In a baking dish, spread a layer of marinara sauce at the bottom. Then, layer eggplant slices, followed by a layer of ricotta cheese, a sprinkle of black pepper, and fresh basil leaves. Repeat the layers until all ingredients are used, finishing with eggplant on top.

Top with Cheese
Spread the remaining marinara sauce on top of the last layer of eggplant. Sprinkle with mozzarella and parmesan cheese.

Serve
