Eggplant Napoleon Ingredients

Method

Eggplant Napoleon Directions

  1. 1

    Prepare the Eggplant

Slice the eggplants into 1/4 inch thick rounds. Sprinkle with salt and let them sit for about 30 minutes to draw out excess moisture. Rinse and pat dry.

  2. 2

    Cook the Eggplant

Preheat the oven to 400°F (200°C). Brush both sides of the eggplant slices with olive oil and arrange them in a single layer on baking sheets. Roast in the oven for about 25-30 minutes until tender and slightly browned, flipping halfway through.

  3. 3

    Layer the Napoleon

In a baking dish, spread a layer of marinara sauce at the bottom. Then, layer eggplant slices, followed by a layer of ricotta cheese, a sprinkle of black pepper, and fresh basil leaves. Repeat the layers until all ingredients are used, finishing with eggplant on top.

  4. 4

    Top with Cheese

Spread the remaining marinara sauce on top of the last layer of eggplant. Sprinkle with mozzarella and parmesan cheese.

  5. 5

    Bake the Napoleon

Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 15-20 minutes until the cheese is melted and bubbly.

  6. 6

    Serve

Allow the Eggplant Napoleon to cool for a few minutes before slicing. Serve warm and enjoy your delicious layered dish!
