Make the Donut Batter
In a large mixing bowl, sift together the flour, baking powder, sugar, and salt.

Mix the Batter
Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

Heat the Oil
In a large pot, heat vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Donuts
Using a piping bag, pipe the batter into the hot oil, forming rings. Fry until golden brown on both sides, about 2-3 minutes per side.

Remove the donuts from the oil and drain on paper towels. Let cool slightly before serving.

In a mixing bowl, combine heavy cream, mascarpone cheese, vanilla extract, and powdered sugar.

Using an electric mixer, whip the mixture on high speed until stiff peaks form.
