Method

For the Donuts

  1. 1

    Make the Donut Batter

In a large mixing bowl, sift together the flour, baking powder, sugar, and salt.

  2. 2

    Combine Wet Ingredients

In another bowl, whisk the eggs, milk, melted butter, and vanilla extract until well combined.

  3. 3

    Mix the Batter

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.

  4. 4

    Heat the Oil

In a large pot, heat vegetable oil over medium heat until it reaches 350°F (175°C).

  5. 5

    Fry the Donuts

Using a piping bag, pipe the batter into the hot oil, forming rings. Fry until golden brown on both sides, about 2-3 minutes per side.

  6. 6

    Drain and Cool

Remove the donuts from the oil and drain on paper towels. Let cool slightly before serving.

For the Vanilla Mascarpone Cream

  1. 7

    Prepare the Whipped Cream

In a mixing bowl, combine heavy cream, mascarpone cheese, vanilla extract, and powdered sugar.

  2. 8

    Whip Until Stiff Peaks

Using an electric mixer, whip the mixture on high speed until stiff peaks form.

  3. 9

    Chill

Refrigerate the whipped mascarpone cream until ready to serve.

For the Lemon Curd

  1. 10

    Combine Ingredients

In a saucepan, whisk together lemon juice, sugar, and eggs until combined.

  2. 11

    Cook the Mixture

Cook over medium heat, stirring constantly, until the mixture thickens and coats the back of a spoon.

  3. 12

    Add Butter and Zest

Remove from heat and stir in butter and lemon zest until fully incorporated.

  4. 13

    Cool and Store

Allow the lemon curd to cool, then transfer to a jar and refrigerate until ready to use.
