Preserved Cherry Tomatoes

Method

Steak

  1. 1

    Prepare the Steak

Season the sirloin steak generously with salt and black pepper on both sides.

  2. 2

    Cook the Steak

Heat olive oil in a skillet over medium-high heat. Add the steak and cook for about 4-5 minutes on each side for medium-rare, or until your desired doneness.

  3. 3

    Add Garlic Butter

In the last minute of cooking, add the garlic butter (prepared in the next section) to the skillet. Spoon the melted butter over the steak as it finishes cooking.

Garlic Butter

  1. 4

    Make Garlic Butter

In a small bowl, mix softened butter with minced garlic and chopped parsley until well combined. Set aside.

Rocket Greens

  1. 5

    Prepare Rocket Greens

In a bowl, toss the rocket greens with olive oil, lemon juice, and a pinch of salt until well coated.

Preserved Cherry Tomatoes

  1. 6

    Prepare Cherry Tomatoes

In a bowl, combine cherry tomatoes with olive oil, salt, and dried oregano. Let sit for at least 15 minutes to allow flavors to meld.

Fries

  1. 7

    Prepare the Potatoes

Peel (if desired) and cut the potatoes into fry shapes.

  2. 8

    Fry the Potatoes

Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the potato strips in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels, then season with salt.
