Method

Prime Rib Preparation

  1. 1

    Season the Roast

Pat the prime rib roast dry with paper towels. Rub the olive oil all over the roast. In a small bowl, combine salt, black pepper, garlic powder, and thyme. Rub the spice mixture evenly over the roast.

  2. 2

    Roast the Prime Rib

Preheat the oven to 450°F (230°C). Place the seasoned prime rib on a rack in a roasting pan. Roast for 20 minutes at this high temperature, then reduce the oven temperature to 325°F (165°C) and roast for an additional 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.

  3. 3

    Rest the Roast

Remove the roast from the oven and let it rest for at least 20 minutes before slicing. This allows the juices to redistribute.

Au Jus Preparation

  1. 4

    Sauté Aromatics

In a saucepan over medium heat, add a bit of oil if needed and sauté the sliced onion and minced garlic until softened, about 3-4 minutes.

  2. 5

    Simmer the Au Jus

Add the beef broth, red wine, and Worcestershire sauce to the saucepan. Bring to a simmer and let it cook for about 15 minutes, allowing the flavors to meld. Strain the mixture to remove solids and set aside.

Sandwich Assembly

  1. 6

    Slice the Roast

Thinly slice the rested prime rib roast against the grain.

  2. 7

    Assemble the Sandwich

Cut the ciabatta rolls in half. On the bottom half, layer slices of prime rib, a slice of provolone cheese, and a handful of fresh arugula. Spread horseradish sauce on the top half of the roll and place it on the sandwich.

  3. 8

    Serve with Au Jus

Serve the assembled sandwich with a small bowl of warm au jus for dipping.
