Prime Rib Preparation

Season the Roast
Pat the prime rib roast dry with paper towels. Rub the olive oil all over the roast. In a small bowl, combine salt, black pepper, garlic powder, and thyme. Rub the spice mixture evenly over the roast.

Roast the Prime Rib
Preheat the oven to 450°F (230°C). Place the seasoned prime rib on a rack in a roasting pan. Roast for 20 minutes at this high temperature, then reduce the oven temperature to 325°F (165°C) and roast for an additional 1.5 to 2 hours, or until the internal temperature reaches 130°F (54°C) for medium-rare.

Rest the Roast
Remove the roast from the oven and let it rest for at least 20 minutes before slicing. This allows the juices to redistribute.

Slice the Roast
Thinly slice the rested prime rib roast against the grain.

Assemble the Sandwich
Cut the ciabatta rolls in half. On the bottom half, layer slices of prime rib, a slice of provolone cheese, and a handful of fresh arugula. Spread horseradish sauce on the top half of the roll and place it on the sandwich.

Serve with Au Jus
Serve the assembled sandwich with a small bowl of warm au jus for dipping.
