    Make the Dough

    In a mixing bowl, combine the all-purpose flour and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together.

    Chill the Dough

    Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour.

Filling Preparation

    Prepare the Apples

    Peel, core, and slice the apples into thin wedges. In a large bowl, toss the apple slices with granulated sugar, cinnamon, nutmeg, lemon juice, and cornstarch until evenly coated.

    Let the Filling Rest

    Let the apple mixture sit for about 10 minutes to allow the flavors to meld.

Assembly and Baking

    Preheat the Oven

    Preheat your oven to 425°F (220°C).

    Roll Out the Dough

    On a floured surface, roll out the chilled dough to about 1/8 inch thickness. Cut into circles large enough to fit in individual pie tins.

    Place the rolled-out dough into individual pie tins. Fill each with the prepared apple mixture, mounding slightly in the center.

    If desired, use leftover dough to create a lattice top or simply fold the edges over the filling. Cut a few slits in the top for steam to escape.

    Bake in the preheated oven for 25-30 minutes or until the crust is golden brown and the filling is bubbly.
