Prepare Taco Filling

    Roast Cauliflower

    Preheat the oven to 425°F (220°C). Toss the cauliflower florets with olive oil, smoked paprika, cumin, and salt in a large bowl until well coated. Spread them evenly on a baking sheet and roast in the preheated oven for 25-30 minutes, or until golden and tender.

    Warm Tortillas

    While the cauliflower is roasting, warm the corn tortillas on a skillet over medium heat for about 30 seconds on each side or until pliable.

Make Chipotle Mayo

    Mix Ingredients

    In a small bowl, combine the mayonnaise, chipotle peppers, and lime juice. Stir until well blended. Adjust seasoning to taste.

Prepare Cilantro Chimichurri

    In a bowl, mix together chopped cilantro, minced garlic, red wine vinegar, olive oil, oregano, and salt. Stir until well combined. Let sit for a few minutes to allow the flavors to meld.

Make Corn Guacamole

    In a bowl, combine the mashed avocados, cooked corn kernels, lime juice, finely chopped red onion, chopped cilantro, and salt. Mix until combined but still chunky.

Assemble Tacos

    To assemble the tacos, place a generous portion of roasted cauliflower on each warm tortilla. Top with chipotle mayo, cilantro chimichurri, and corn guacamole. Drizzle with Valentina's hot sauce to taste.
