Preparation

Prepare the Sauce

In a small saucepan, combine soy sauce, brown sugar, grated ginger, minced garlic, and rice vinegar. Heat over medium heat until the sugar dissolves. Remove from heat and set aside.

Cook the Chicken or Tofu

In a skillet over medium-high heat, add a little oil and cook the chicken (or tofu) until fully cooked and golden brown. Pour the sweet soy ginger glaze over the cooked chicken/tofu and stir to combine. Cook for an additional 2-3 minutes until the sauce thickens slightly.

Make the Spicy Aioli

In a small bowl, mix together mayonnaise, sriracha sauce, and lime juice until well combined. Adjust spice level to taste.

Assembly

Assemble the Wraps

To serve, spoon the glazed chicken/tofu mixture into the center of each lettuce leaf. Top with chopped peanuts, crispy wontons, and a drizzle of spicy aioli. Fold the lettuce around the filling and enjoy!
