In a large mash tun, combine the pale malt, flaked oats, and caramel malt with 3 liters of water. Heat to 152°F (67°C) and hold for 60 minutes.

Mashing

After mashing, sparge the grains with an additional 3 liters of water to collect wort in the brew kettle.

Sparging

Bring the wort to a boil. Once boiling, add 1 oz of Citra hops and boil for 60 minutes. Add the remaining 1 oz of Citra hops and 1 oz of Mosaic hops in the last 10 minutes of the boil.

Boiling

Cool the wort quickly using a wort chiller or an ice bath, bringing it down to around 70°F (21°C).

Cooling

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast and seal with an airlock. Allow fermentation to occur in a dark, cool place for 1-2 weeks.

Fermentation

Once fermentation is complete, siphon the beer into sanitized bottles, adding priming sugar as needed for carbonation. Cap the bottles and let them condition for another week.

Bottling

Chill the bottles in the fridge and enjoy your homemade Parallel 49 ‘Trash Panda’ Hazy IPA!
