Method
Cooking Chicken
Prepare Skillet
Preheat a cast-iron skillet over high heat until it's very hot.
Season Chicken
Rub the chicken breasts with olive oil and coat evenly with Cajun seasoning.
Cook Chicken
Place the chicken breasts in the skillet and sear for 5-7 minutes on each side until blackened and cooked through.
Rest Chicken
Remove from the skillet and let rest for a few minutes before slicing.
Potato and Bacon Salad
Cook Bacon
In a skillet, cook the bacon until crispy. Remove and crumble.
Mix Salad
In a large bowl, combine the potatoes, crumbled bacon, green onions, mayonnaise, Dijon mustard, salt, and pepper. Mix well.
Creamy Coleslaw
Make Dressing
In a separate bowl, combine mayonnaise, apple cider vinegar, sugar, salt, and pepper. Mix until smooth.
Combine Slaw
Pour the dressing over the shredded vegetables and toss until well coated.
