Brewing Process
Prepare the Mash
In a large pot, heat 8 cups of water to about 165°F (74°C). Add the malted barley and optional corn or rice. Stir well and let it sit for about 60 minutes.
Lautering
After the mash has rested, drain the liquid (wort) into another pot, leaving the grain behind. Rinse the grains with hot water to extract more sugars.
Boiling
Bring the wort to a boil and add hops. Boil for about 60 minutes while stirring occasionally.
Cooling
After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).
Fermentation
Transfer the cooled wort to a fermenter and pitch the yeast. Seal with an airlock and let it ferment for about 1-2 weeks at a stable temperature.
