Method

Sauce Preparation

    Cook the Garlic

    In a saucepan, heat olive oil over medium heat. Add minced garlic and Calabrian chili paste, sauté until fragrant.

    Add Tomatoes

    Add canned whole tomatoes (crushed by hand), salt, and black pepper. Simmer for 20 minutes until thickened.

    Finish the Sauce

    Stir in chopped fresh basil just before serving.

Pasta Cooking

    Cook the Pasta

    Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Whipped Ricotta Preparation

    Whip the Ricotta

    In a mixing bowl, combine ricotta cheese, heavy cream, and a pinch of salt. Whip until smooth and creamy.

Garlic Toast Preparation

    Prepare Garlic Butter

    In a small bowl, mix softened butter, minced garlic, and chopped parsley.

    Toast the Bread

    Spread garlic butter on baguette slices and toast in the oven at 375°F (190°C) for 10-12 minutes until golden brown.

Assembly

    Combine and Serve

    Toss cooked spaghetti with the tomato sauce, adding reserved pasta water as needed to reach desired consistency. Serve topped with whipped ricotta and grated parmesan. Accompany with garlic toast.
