Prepare Sushi Rice

Rinse and Cook the Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rice and water in a rice cooker and cook according to the manufacturer's instructions.

Season the Rice
Once cooked, transfer the rice to a large bowl and mix with rice vinegar, sugar, and salt while the rice is still warm. Let it cool to room temperature.
Prepare Salmon

Season the Salmon
Season the salmon fillet with olive oil, salt, and black pepper on both sides.

Sear the Salmon
Heat a skillet over medium-high heat. Once hot, add the salmon fillet and sear for about 3-4 minutes on each side, or until cooked to your liking. Remove from heat.

Torch the Salmon
Using a kitchen torch, carefully torch the top of the salmon for a few seconds until it is slightly charred and caramelized.
Make Umami Sauce

Combine Ingredients
In a small bowl, whisk together soy sauce, sesame oil, mirin, and sriracha until well combined.
Assemble Sushi

Slice the Salmon
Slice the seared salmon into thin pieces.

Prepare Serrano Peppers
Thinly shave the serrano peppers.

Serve
On a plate, place a small amount of sushi rice, top with a slice of seared salmon, drizzle with umami sauce, and garnish with shaved serrano peppers.
