    Prepare the Filling

    In a large bowl, combine ground pork, chopped cabbage, green onions, minced garlic, minced ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

    Assemble the Gyoza

    Place a small spoonful of the filling in the center of a gyoza wrapper. Moisten the edges of the wrapper with water, fold it in half to enclose the filling, and pinch the edges to seal tightly. Repeat with remaining wrappers and filling.

    Cook the Gyoza

    Heat a non-stick skillet over medium-high heat and add a little oil. Place the gyoza in the skillet and cook for 2-3 minutes until the bottoms are golden brown. Add about 1/4 cup of water to the skillet and cover immediately. Allow the gyoza to steam for about 5-7 minutes until the water evaporates and the gyoza are cooked through.

    Serve hot with a side of hot mustard for dipping.
