Prepare the Pastry
In a large bowl, combine the flour, salt, and sugar. Cut in the butter until the mixture resembles coarse crumbs. Stir in the ice water, one tablespoon at a time, until the dough comes together. Divide the dough into 4 equal portions, shape into disks, wrap in plastic, and refrigerate for at least 1 hour.

Prepare the Filling
In a large bowl, combine the sliced apples, brown sugar, cinnamon, nutmeg, and lemon juice. Toss until the apples are evenly coated.

Assemble the Pies
Preheat the oven to 375°F (190°C). On a floured surface, roll out each disk of dough into a circle. Place a portion of the apple filling in the center of each circle. Fold the dough over the filling and crimp the edges to seal. Cut a small slit on top of each pie to allow steam to escape.

Bake the Pies
Place the pies on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until golden brown. Remove from the oven and let cool slightly.

Serve the individually baked apple pies warm, topped with toasted almonds and a scoop of Canadian maple ice cream.
