Prepare Ingredients
Wash and hull the strawberries, then slice them in half. If using fresh beets, roast them until tender, peel, and dice them. If using canned or pre-cooked beets, simply dice them.

Roast Corn
If you have fresh corn, roast the ears on a grill until slightly charred, then slice the kernels off the cob. If using canned or frozen corn, ensure it is drained and heated through.

Combine Ingredients
In a large salad bowl, combine the sliced strawberries, diced beets, roasted corn, and shredded aged cheddar cheese.

Add Dressing
Drizzle the champagne vinaigrette over the salad and toss gently to combine all ingredients.

Sprinkle the candied sunflower seeds over the top of the salad for added crunch and sweetness. Serve immediately.
