    Prepare the Vegetables

    Preheat your oven to 375°F (190°C). Dice the onions and finely chop the cabbage. Cut the green bell peppers in half lengthwise and remove the seeds.

    Sauté the Onions and Cabbage

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onions and sauté until translucent, about 3-4 minutes. Add the chopped cabbage, salt, and black pepper, and cook until the cabbage is soft, about 5-7 minutes.

    Prepare the Stuffing Mixture

    In a large bowl, combine the sautéed onion and cabbage mixture with the canned clams (drained), sweet chili sauce, wasabi paste, cottage cheese, and diced Andouille sausage. Mix well until all ingredients are fully incorporated.

    Prepare the Bell Peppers

    Brush the inside of each halved green bell pepper with the remaining 1 tablespoon of olive oil. Fill each half with the stuffing mixture, pressing down gently to pack it in.

    Bake the Stuffed Peppers

    Place the stuffed peppers in a baking dish. Cover with foil and bake in the preheated oven for 25 minutes. Remove the foil, sprinkle the tops with bread crumbs, and bake for an additional 10-15 minutes until the tops are golden brown.

    Serve

    Once baked, remove from the oven, let cool for a few minutes, then serve warm. Enjoy your Stuffies!
