Prepare the Mushrooms
Preheat your oven to 375°F (190°C). Clean the large mushrooms by gently wiping them with a damp cloth. Remove the stems and set them aside.

Make the Filling
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped mushroom stems and mixed bell peppers. Sauté for about 5 minutes until softened. Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and mix in the Citrus Buffalo sauce.

Stuff the Mushrooms
Take each cleaned mushroom cap and fill it generously with the prepared filling mixture. Place the stuffed mushrooms on a baking sheet.
Topping and Baking

Prepare the Topping
In a small bowl, combine the grated Asiago cheese, breadcrumbs, salt, black pepper, and remaining tablespoon of olive oil. Mix well until the breadcrumbs are evenly coated.

Top the Mushrooms
Sprinkle the breadcrumb and cheese mixture over the stuffed mushrooms evenly.

Bake
Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown and the mushrooms are cooked through.

Remove from the oven and let cool for a few minutes before serving. Enjoy your stuffed mushrooms warm!
