Fried Calamari

Method

Fried Calamari

  1. 1

    Prepare the Calamari

Rinse the calamari rings under cold water and pat them dry with paper towels.

  2. 2

    Make the Breading Mixture

In a large bowl, combine all-purpose flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper. Mix well until evenly combined.

  3. 3

    Prepare the Wet Mixture

In another bowl, whisk together the egg and milk until blended.

  4. 4

    Coat the Calamari

Dip the calamari rings first into the wet mixture, allowing any excess to drip off, then dredge them in the breading mixture. Make sure each ring is well coated.

  5. 5

    Heat the Oil

In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 375°F (190°C). You can test if the oil is ready by dropping a small piece of bread into it; if it sizzles and browns quickly, the oil is hot enough.

  6. 6

    Fry the Calamari

Carefully add the coated calamari rings to the hot oil in batches, making sure not to overcrowd the pan. Fry for about 2-3 minutes or until golden brown, turning occasionally for even cooking.

  7. 7

    Drain and Serve

Using a slotted spoon, remove the fried calamari from the oil and place them on a plate lined with paper towels to drain excess oil. Garnish with chopped fresh parsley and serve immediately with lemon wedges on the side.
