Method

Preparation of Seafood

    Prepare the Shrimp

    In a pot of boiling salted water, add the large shrimp and cook for 2-3 minutes until they turn pink and opaque. Remove them and immediately place them in an ice bath to stop the cooking process. Drain and set aside.

    Prepare the Oysters

    Ensure the fresh oysters are clean. Open them carefully if they are not pre-shucked. Keep them on ice until serving.

    Prepare the King Crab Legs

    If using frozen king crab legs, thaw them in the refrigerator overnight. Crack the legs and arrange them on a plate.

    Prepare the Scallops

    Heat a non-stick skillet over medium heat. Sear the scallops for about 2-3 minutes on each side until they are golden brown and cooked through. Remove from heat and let them cool.

Assembling the Tower

    Layer the Seafood

    On a large serving platter, start by placing the king crab legs as the base layer. Next, arrange the cooked shrimp around the crab legs.

    Add Oysters and Scallops

    In the center of the tower, place the oysters. Then, stack the seared scallops on top of the shrimp and crab legs to create height.

    Garnish

    Add lemon wedges around the seafood tower for added flavor and visual appeal. Place a sprig of fresh dill on top for garnish.

    Serve with Sauces

    Serve the chilled seafood tower with cocktail sauce and Tabasco sauce on the side for guests to enjoy.
