Marinade Preparation
Prepare the Marinade
In a medium bowl, combine the miso paste, sake, mirin, brown sugar, and soy sauce. Whisk together until the mixture is smooth and the sugar is dissolved.
Fish Preparation
Marinate the Black Cod
Place the black cod fillets in a shallow dish and pour the marinade over them. Ensure that the fish is well coated. Cover the dish with plastic wrap and refrigerate for at least 24 hours, preferably 48 hours for maximum flavor.
Prepare for Cooking
Remove the marinated black cod from the refrigerator 30 minutes before cooking to allow it to come to room temperature.
Cook the Fish
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Place the marinated black cod fillets on the prepared baking sheet, skin side down. Drizzle sesame oil over the top of the fish.
Bake the Cod
Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork and has a caramelized appearance on top.
Garnish and Serve
Remove from the oven and let rest for a few minutes. Garnish with thinly sliced green onions and sprinkle with sesame seeds before serving.
